Carolina Ramirez, a standout in Unblended's Young Producer Program, is not only an attorney and endurance runner but also an exceptional specialty coffee producer. She embodies the thrill of witnessing young talents flourish in coffee farming. After studying law in Medellin, she returned to her parents' farm in the Andes during the pandemic, where she fell in love with specialty coffee. Today, she collaborates with her mother on coffee design, both handling selection and processing.

Carolina describes this coffee as "Serenity," marking her first experimental process, resulting in some of her finest work. Hand-harvested and left to ferment for 140 hours in an open vat, the coffee is filtered and poured over cherries daily before pulping and sun-drying for three weeks. The result: subtle notes of red fruits, pineapple, and cocoa, with a juicy body. Don't miss out on this exceptional coffee.

Espresso Recipe: Use 18 grams of coffee in the filter holder to extract 35 grams of liquid coffee within 25 seconds.
